You could call this quick vegetable soup also get well soon soup. No matter if you have a flu, cold or something with your stomach, this easy to make soup is going to fix it and cheer you up in no time. When I had the food poisoning I got messages from 3 different friends telling me I should eat the vegetable soup. So I made a really big pot and I could eat it all day long. Even if you are feeling great and you are looking for a quick lunch or dinner, this soup will do a great job.
– 5 peeled potatoes, cut in small cubes– 2 carrots, peeled and cut in small pieces
– 1 cup frozen sweet peas
– 1 cup frozen corn
– 5 bay leaves
– 1tsp grounded black pepper
– 6-8 cups water
– 3-4 tbsp dry vegetable seasoning*
*I never became friends with liquid chicken or vegetable broth that seams to be standard here in the US, I was always used to dry sesaonings you mix with water to get the broth. Finally I found a really good one at World Market, called Vegeta. It has a nice veggie flavor, without being to intense, you can use it to season so many things, from meat to sauces and it’s super fertile. One package cost around $5 and it lasts for at least 6 months, even longer. My problem with liquid broth was always that if I only need one cup for something, the rest will get bad until next time. I highly recommend adding Vegeta to your pantry.
How to make it:
Prepare the ingredients and mix them all together in a big pot.
Place the pot on high heat and bring to boil. When the soup starts to boil, reduce to medium heat and shimmer for about 20-30 minutes, until the potatoes and carrots are tender. Done.
Tip: you can also add some chicken breast to it when the soups start to boil. Add the whole chicken breast, cook it trough, take the chicken out of the soup, chop it into small pieces and place it back into the soup.
